IMO, the only "classic" kitchen is one that fits the style of the home.  We have a 1930s Cape and I plan to do historic looking cabinets in a neutral with a beadboard backsplash.  It's not trendy, but should match the house and be harder to date.  We previously live in a 1920s row house with an historic looking kitchen that was 10 years old when we bought and  iw would be 16 years old, but it is still 100% perfect for the home.  That kitchen will fit the house forever.  That's harder to do with a 1980s or 90s colonial or McMansion, but works for older homes.  [/quote]
