Literally, it's the person sitting closest to the platter with the roast beef and ham asking you which one you want, so that the heavy platter doesn't need to be passed from person to person. Why would saying "I'll have ham" rather than "Can I have some of each?" be embarrassing? The rest of the dishes are passed around the table like a normal family dinner, but enough meat for 10 people is a lot to ask a 7 year old to pick up and pass on, so when you get your plate it's already got your choice of meat (or no meat) on it.
