When Frozen came out, there were a lot of people who felt that Elsa's struggle with her powers was an analogy for the struggle that many have with their sexuality. Being told that something you cannot change is wrong and dangerous? Check. Being afraid that if people find out, you will be ostracized and possibly harmed? Check. "Everything" is not gay now. There are still plenty of straight people in the world and stories about them. As for Captain America and Bucky Barnes, they seemed pretty much like boyfriends to me, minus the sex. If MCU wants to spell it out, that's fine with me, though I think leaving it implied a la Dumbledore is also fine, in both cases.
The original story they planned was darker. Then the Lopezes wrote Let It Go, and they changed the whole direction of the story. John Lasseter supported the change because he thought it would resonate with his son, who has (if I recall correctly) diabetes and felt ostracized because of it.
