"Everything" is not gay now. There are still plenty of straight people in the world and stories about them.
As for Captain America and Bucky Barnes, they seemed pretty much like boyfriends to me, minus the sex. If MCU wants to spell it out, that's fine with me, though I think leaving it implied a la Dumbledore is also fine, in both cases.
The original story they planned was darker. Then the Lopezes wrote Let It Go, and they changed the whole direction of the story. John Lasseter supported the change because he thought it would resonate with his son, who has (if I recall correctly) diabetes and felt ostracized because of it.
