Get some meat specially ground for chili (they have it at Whole Foods as well as Giant). Also some regular ground turkey. Chop in food processor: one red and one green pepper, one large onion and two stalks celery per pound of meat (I add a carrot too, for the extra veg) (my kids don't like big chunks); Saute the peppers, onion, and celery (and carrot) in a large saucepan with a tablespoon or so of olive oil until tender. Add crused garlic (I use a lot of garlic, about 6 cloves per pound of meat, but that's just me); cook another couple of minutes, careful not to burn the garlic. Add the meat to the saucepan and brown. Add one large can of crused tomatoes or tomatoe puree per pound of meat, a can of tomato paste, a tablespoon of worcestershire sauce, a pack of chili seasoning (or use chili powder and your own cayenne), crushed red pepper, cumin, seasoning salt, thyme (fresh is best, but dried is fine), and a tablespoon or so of brown sugar. Once the mixture has been cooking about 20 minutes or so, add half a bottle of beer and your beans. I like a lot of beans and use a mixutre of: light and dark red kidney beans, pinto beans, black beans, and whatever else strikes your fancy. I rinse the beans (canned) because they're packed in high sodium liquid. Adjust seasoning to taste (eg, more sugar, more salt, more pepper) Enjoy! I make a huge pot of this and freeze the leftovers. My kids love it with rice, pasta, and over tortilla chips.
