I like a lot of beans and use a mixutre of: light and dark red kidney beans, pinto beans, black beans, and whatever else strikes your fancy. I rinse the beans (canned) because they're packed in high sodium liquid.
Adjust seasoning to taste (eg, more sugar, more salt, more pepper)
Enjoy! I make a huge pot of this and freeze the leftovers. My kids love it with rice, pasta, and over tortilla chips.


Sounds like a good recipe. Mine is similar, but I add a small piece of good dark chocolate to the simmering chili. I also like a bit of acid, so I add a tablespoon or so of cider vinegar at the end. Chili is a fun dish to modify and fool around with the recipe until you find what you like best. I also think the fire-roasted tomatoes ( Muir Glen) add to the flavor/

I usually make it with only 1.5 lbs of ground beef or ground turkey (I've also made it with meat substitute crumbles), and add a can of black beans in addition to the 2 cans of kidney beans. I only include one bottle of beer instead of two.

I didn't make the biscuits - they are not my forte - but this chili was awesome. And I'm not usually a fan of beef chili.

This may not go over too well with a toddler, but it's our favorite chili. I usually halve the recipe and have about 6 good-sized servings. And note that it's just two chipotle chiles - NOT two cans! My husband made that mistake once and it was practically inedible.

This all goes in a slow cooker:

2 cans of pinto beans
2 cans of black beans
2 cans of tomato sauce
2 cans of diced tomatoes (we used fire roasted)

We don't like chunks of onion, or you can dice up one of those and add it in (I used onion flakes instead).

Throw in some spices: all spice, chili powder (add a little at a time to control the spice), garlic powder, salt, and black pepper.

Cook on low for 8 hours, it makes a ton and is just fantastic! We are vegan, so we occasionally throw in a bag of ground meat substitute, if you wanted to add in some meat I'd add another can of tomato sauce.

I made this one last week and both my husband and I thought it was really good. Very easy, too. My kids thought it was a little too spicy, but you could adjust that.

Rachel Ray's three bean veggie chili is great, my 2 year old loves it.. and it's super easy. When I'm making it for her, I leave out the jalapeno and the hot sauce.. and it tastes just fine without it. This is one of her 30 minute meals.. but I find it tastes a lot better if you let it simmer on the stove for an hour or so.

2 Tablespoons olive oil
2 medium onions, chopped
1 medium red pepper, chopped
1 medium green pepper, chopped
1 large jalapeno pepper (seeded, de-veined and chopped)
6 cloves garlic, minced
1 cup beer
2 16 oz. cans diced tomatoes
1 14 oz. can black beans
1 16 oz. can dark red kidney beans
1 tablespoon ground cumin
2 tablespoons chili powder
1 tablespoon hot pepper sauce
1 teaspoon salt
1 can vegetarian refried beans

In a large pot, add olive oil and warm over medium heat. Add onion, peppers, and garlic. Saute for 5 minutes or until softened. Add beer and stir well. Add tomatoes, black beans and kidney beans, stirring well to combine. Add cumin, chili powder, hot sauce and salt. Stir in refried beans to thicken chili. Reduce heat to low and simmer for 15 minutes.

My toddler keeps asking for chili for dinner (loves the beans) but I have not yet found a great recipe. If you have a great recipe (not too spicy) would my mind sharing it with me?
