Tomato basil and mozz salad. A fresh baguette on the side, with a little container of olive oil with herbs for dipping. Pasta salads are good, too. Chips and salsa with some cheeses and olives. Composed salad that you can put together from individual containers once you are there. There are my go-tos for pool dinner.
This does sound delicious. How old are your children? All I can think of is my twin 2-year-olds somehow upending the oil on themselves and everything else (despite my vigilance to avoid it) and extra containers to clean for a salad that will likely be quickly deconstructed again. Think I'd probably stick to the sandwiches and easy less-mess finger food at this age.
