The recipes boggle my mind- not for the beginner. I suspect whoever recommended it was just a showboating food snob.
I'm not a real cook or anything, but despite my lack of skills I've made recipes from this book. There are a couple that are my favorites, like the one with chard (or kale), chickpeas, and greek yogurt. But I agree that these recipes are not for the beginner and they do require a certain time commitment. But you can always do a few shortcuts, and once you've made something a couple of times then it goes faster.
I have "Quick Vegetarian Pleasures" which has some good recipes. (Some are bland/blah but some are great. The couscous/cheese/spinach one is always a favorite whenever I make it for home or a potluck.)
