He doesn't do a mirepoix (which I tend to think of as relatively finely chopped), just tosses in coarsely chopped carrots, celery, onion, etc. We preordered ours so I didn't ponder the other choices, just noticed that there were plenty of them. They had everything else on my list as well, although the chestnuts were crazy expensive. [/quote]
