Add the rest of the ingredients and simmer for 1.5-2 hours. The reason for the large range of broth is because you may have to add more as it cooks if it is getting too thick. Start with 2 cups of broth and use your judgment and preference as you’re cooking the chili. Taste near the end of cooking and see if it needs to have more salt or some sugar added to balance the acidity from the tomatoes. Scoop into bowls and top with cheese and/or sour cream. Notes You can shred the beets instead of cubing them if you need to hide them. You can add shredded carrots as well or instead of the beets Any sort of greens would work in this chili– spinach, collard greens, kale, etc. Just make sure to chop them finely if they are harder greens like the collards.[/quote]
