You needed to google beet chili, if you google turkey beet chili you get turkey beer chili.

Cut the tops and tails off of the beets, chop them into bite sized pieces, add to the pot, and stir. Add the beans and stir.

Chop the greens and add to the pot. Add the rest of the ingredients and simmer for 1.5-2 hours. The reason for the large range of broth is because you may have to add more as it cooks if it is getting too thick. Start with 2 cups of broth and use your judgment and preference as you’re cooking the chili. Taste near the end of cooking and see if it needs to have more salt or some sugar added to balance the acidity from the tomatoes.

Scoop into bowls and top with cheese and/or sour cream.

Notes

You can shred the beets instead of cubing them if you need to hide them.
You can add shredded carrots as well or instead of the beets
Any sort of greens would work in this chili– spinach, collard greens, kale, etc. Just make sure to chop them finely if they are harder greens like the collards.

I am expecting and went to an event called the baby shower- I forget what vender was selling it, but it was a delivery service and I am moving out of town in about a month. Wanted the recipe for this winter. Couldn't taste the beets and it was just perfect with cilantro. Wish I could remember the vendors name! I'd love to purchase some before I go. Wonder if it will freeze well?

Sorry, but my first thought is that this was a joke -- turkey beet chili sounds terrible!

But seriously if you disagree you might try looking for stew with beets and chicken. Lots more chicken recipes than turkey and really for these kinds of things they are interchangeable.

And really, I think a "chili" is just a stew. So you could leave that term out of your search as well. At least I hope it is because the thought of beets with chili power and the other chili spices, yuk!
