Berry smoothies (like virgin daiquiris) on the side. Friday — homemade salmon sushi with scallions. Saturday— spaghetti with homemade pesto and chopped tomatos Hope that gives some ideas! So far for this week I’m hoping for: Grilled salmon (marinated from Costco) with orzo and peas Empanadas with mushroom and manchego or bean and mozarella, maybe a side salad or smoothies Chicken and bean tacos with tomato and avocado , maybe picked cabbage for topping too but I’m sure the kids won’t eat that. Spaghetti with homemade sauce and meatballs Pasta with Italian sausage, cherry tomato’s, arugula, garlic and Parmesan. I guess not super exciting but that’s where we are with weeknight dinners and teens. [/quote]
