Last week we had:
Thai green curry with chicken and vegetables, rice

Seafood stew with a mixture of cod, salmon, scallops, shrimp (using up the last pieces in the freezer from various packages) in a tomato-herb broth, salad, bread

Bacon-cheddar-spinach quiche with sliced fruit

Grilled chicken with angel hair pasta and asparagus


Next week I'm planning:

Roasted chicken with butternut squash (cubed and roasted with cinnamon and maple syrup) and peas (this is Sunday night)

Loaded potato soup with broccoli, cheddar cheese, and bacon

Leftover chicken will go into some kind of casserole, either a pasta casserole with mushrooms and peas, or a layered enchilada verde

Grilled steak, zucchini, potato wedges cooked in the air fryer with garlic and thyme

Pork chops, haven't decided on sides yet

Bean and cabbage soup (DCs will be at the high school football game, so this is just DH and me)

I’m going to do a chicken mushroom pie with duchess potatoes, one pot beef stroganoff, creamy chicken noodle soup with homemade croutons. Will throw some broccoli on the side and peas and corn in a few things. That’s all I got. I do like the idea of getting moby Dick and then using all the rice leftovers.

Maybe a bean and vegetable soup, tofu stir fry, or sweet potato pancakes later in the week.


Would love the Ethiopian lentil stew recipe. Do you make or buy injera for it? That might be beyond my talents.

Unfortunately I have no good teff or injera source! I just made regular wheat flatbreads, similar to parathas. Injera would be better.

I do have teens. It’s just me and teens actually. If it were just me I’d do less meat.
The rockfish was not cheap but not super expensive and I think you could easily use cheaper fish. I’d use the Costco cod if I do it again.
Pasta sauce is so easy. It takes like 5 minutes to make but I have to do it on a work from home day or weekend as I let it simmer a couple of hours. The meatballs take longer so it’s usually a weekend meal—might save it for Saturday.

The homemade sushi is expensive but still cheaper than going out. The fish was $15, sushi rice was a few dollars, yeh scallions weee like fifty cents, and the nori wrap was about $3, so came in at about $20 for a lot of sushi. We do it maybe once every month or two.

I use the Goya discs. I make the filling. The mushroom is just sautéed mushroom in olive oil with garlic maybe scallions or shallots thyme and white wine, then k grate in a little manchego. You have to cook it before putting it in the disks then just bake the disks. The bean is just canned black beans with garlic power, cumin. Slat and some mozarella. Brush a little olive oil on too of the empanadas.

I just simmered it in the sauce which was Kevin brand from the grocery store. It was really quick. I guess I did defrost it a bit before putting it in.

Why be a party pooper?

I’m not the OP, but I have teens — I’m the one who made pasta e fagioli tonight. I made it a month or so ago and froze the remainder for leftovers, reconstituting it with chicken broth. Homemade sauce is easy and can be made ahead of time — I usually make a big batch and freeze it in portions. A lot of chicken dishes are started on the stovetop, then finished in the oven — easy.

Looks like a good week for grilling, so far I am planning:
Sunday: grilled bratwursts with buns and baked beans
Monday: grilled chicken breasts for Caesar salads
Tuesday: concession stand dinner since DD has a late game
Wednesday: sheet pan chicken thighs with rice
Thursday: if I can get to the Asian grocer, Vietnamese pork patties with rice noodles and cucumber salad.

Last week we had:

Flounder with a white wine and caper sauce
Penne with spicy clam sauce
Garlicky chicken stir-fried with green beans
Butter chicken with rice and peas

Tonight we’re having pasta e fagioli with crusty bread.

I’m not sure what we’ll have this coming week. I have been furloughed, so we may do a lot of beans!

I feel like I did pretty well this week with quick dinners that are moderately healthy so I will share:

Sunday we got Moby dicks family takeout and they gave us endless rice so I used that for 3 meals.

Monday — rice with pacific rockfish and peas in purchased tikka masala sauce. I used a ton of frozen peas — just dumped in half a bag at the end. I put the fish in the sauce frozen and just let it cook that way.

Tuesday — braised boneless chicken thighs on garlicky sauce. Steamed broccoli. Rice. (The garlic sauce was just mashed garlic cloves that I let cook in the braising liquid and then smashed up and boiled the liquid down a little—it went over every right including the broccoli.).

Wednesday — TJ butternut squash ravioli with sage and butter. Sliced apples on side.

Thursday — beans and cheese and scallion quesadillas with chopped cherry tomato’s and mashed avocado. Berry smoothies (like virgin daiquiris) on the side.

Friday — homemade salmon sushi with scallions.

Saturday— spaghetti with homemade pesto and chopped tomatos

Hope that gives some ideas!

So far for this week I’m hoping for:

Grilled salmon (marinated from Costco) with orzo and peas

Empanadas with mushroom and manchego or bean and mozarella, maybe a side salad or smoothies

Chicken and bean tacos with tomato and avocado , maybe picked cabbage for topping too but I’m sure the kids won’t eat that.

Spaghetti with homemade sauce and meatballs

Pasta with Italian sausage, cherry tomato’s, arugula, garlic and Parmesan.

I guess not super exciting but that’s where we are with weeknight dinners and teens.
