Thats a ton of food for 4 people! We usually get a half rack of ribs and 1 lb of anther meat for 4 people plus 1 small side each that we share. They don't have a ton of healthy options so the sides are heavy. They also have cornbread.
I didn’t list quantities, as that is what I am seeking advice on :-) For reference, Rocklands’ own suggestion for “family of 4” is 2 lbs of meat and 3 pints of sides - I am not sure if that will be enough for 4 college students (vs mom/dad/2 kids) so is why I thought I’d add ribs, and maybe bump side dish quantities? - OP
I have teen/college aged athletes and a DH who loves BBQ. For the 4 of us, I’d get 2 lbs of chicken, 1-2 lbs of brisket, a full rack of ribs, 3 pints of sides (maybe a quart if there were any we particularly liked, and cornbread. We might or might not end up with leftovers on any given day. If so, I’d use the leftovers for tacos later in the week.
