I think is a very nice gesture. I sometimes received holiday cards and gifts (gift cards included, among things like scarves, books, and handmade ceramics) from regular students when I taught yoga part time throughout my 30s. And I always think a gift card to someplace specific (e.g., Lululemon) or near to your interactions (e.g., a boutique, bookshop, tea house, or coffee shop by your gym) is the most genuine route for gift card giving vs super generic like Target.
