Duck is very easy!
Remove giblets and cut off the last wing joint. Season with salt and pepper inside and all over (I used adobo seasoning). Stuff with quartered apples, I like mine on the tart side.
Oven should be preheated to 375F.
Place the duck in a large cast iron Dutch oven and pour a bottle of beer. Cover and roast for 1 hour. Take off the lid and roast for one more hour. Done.
I am pretty sure beer can be substituted with veg stock if there are food sensitivity concerns.

I like this recipe for pork tenderloin:

1 lb. pork tenderloin
12 slices bacon
6 slices onion

oooh, that sounds good. I can't really visualize how it looks like after it's cooked but I'll give it a try.

We do prime rib, potatoes, spinach, butternut squash. Leftover beef is used in fajitas on the 26th

For 4, consider a roast duck.
Add roasted veggies as a side.

It's just going to be the 4 of us, but I don't want to be making the same old things. Options are limited because my kids have tons of allergies (dairy, egg, soy, wheat, nuts, legumes, seafood and others).
My fall back plan is steak/salmon, potatoes and salad. But I'm looking for something more exciting.
