Done right, the yolks themselves are cooked through but also provide that creamy/jammy texture that you would get from avocado, etc. Just try cooking them less, and adding just salt, maybe some hot sauce or everything bagel seasoning. Everybody has their own method, but I start them in cold water, bring to a boil, cover, turn the heat off and let sit for 8 minutes. Directly into ice bath. They peel easily and are cooked through but not chalky.[/quote]
