If you have an InstaPot, they cook hard boiled eggs really well. The yolk should be creamy, not dry.

Overcooking makes hardboiled eggs very dry and chalky. Done right, the yolks themselves are cooked through but also provide that creamy/jammy texture that you would get from avocado, etc.

Just try cooking them less, and adding just salt, maybe some hot sauce or everything bagel seasoning.

Everybody has their own method, but I start them in cold water, bring to a boil, cover, turn the heat off and let sit for 8 minutes. Directly into ice bath. They peel easily and are cooked through but not chalky.

A tablespoon of nonfat yogurt has about 20 calories. A teaspoon of butter has about 30 calories. You can have the butter, it's really ok.

You can chop them up and make egg salad. Mix with mostly greek yogurt, mustard and a little mayo, and veggies of your choice. I do diced onion, pickle, and a little coleslaw (the last one only I like in my family)

You can also use this filling with a little paprika to make deviled eggs

Hardboil them for 8-9 minutes then smash onto lightly buttered toast wiht salt and pepper. A teaspoon of butter isn't going to ruin your diet.
