So it's not summery, but it's packed with nutrients and the kids love to both make it and eat it, so that's a win in my book. Adapted from a recipe I saw online: Lacinato kale, massaged Roasted chickpeas, sweet potatoes and broccoli Chopped apple Raisins Sunflower seeds Balsamic vinegar And that's it. Serving tonight with grilled salmon. Posting this partly to give hope to parents of younger kids (ours are upper elementary) going through a picky phase. Mine were great eaters as toddlers, then we hit the years when everything but chicken nuggets and mac & cheese were rejected. Keep trying and let them help in the kitchen, even if it makes a mess and tries your patience. I realize that may not help for supertasters or kids with sensory issues. But other kids may outgrow it, then eventually you can get back to serving things like this again!
