It’s the dark kale, I think called dinosaur kale too. They have it at Whole Foods and other places.

Yes, I am a new convert to white wine vinegar and rice vinegar and am giving balsamic a rest.. My Italian Nonna always used white vinegar in dressing and in Italy our salads were dressed with little more than olive oil and lemon.

Kale can be tough/fibrous. Rubbing the dressing into it softens the leaves and makes raw kale more tender for salads.


Yes, it makes it sooo much better!

You can also slice it really thin and then kind of mash it around with a fork if you don't want to do the massaging with your hands. But that's not quite as effective.

So it's not summery, but it's packed with nutrients and the kids love to both make it and eat it, so that's a win in my book. Adapted from a recipe I saw online:

Lacinato kale, massaged
Roasted chickpeas, sweet potatoes and broccoli
Chopped apple
Raisins
Sunflower seeds
Balsamic vinegar

And that's it. Serving tonight with grilled salmon.

Posting this partly to give hope to parents of younger kids (ours are upper elementary) going through a picky phase. Mine were great eaters as toddlers, then we hit the years when everything but chicken nuggets and mac & cheese were rejected. Keep trying and let them help in the kitchen, even if it makes a mess and tries your patience. I realize that may not help for supertasters or kids with sensory issues. But other kids may outgrow it, then eventually you can get back to serving things like this again!
