Mix, Let the mixture come to a boil and then cover and cook for approx 20 minutes on low. Check to see if the lentils are cooked (It should smush up when you press between finger and thumb), else cook for sometime more. Add the chopped cilantro and cook for a minute more. Serve with rice. It is a very forgiving recipe. If you do not have the spices, you can can just use salt and pepper and it will still taste good. The magic lies in frying the Onions, Tomatoes, Ginger, Garlic. I have even made it with adobo seasoning, jerk seasoning, taco seasoning, chilli seasoning, ramen noodles flavoring... I have used cooked it without any meat, I have cooked it with potatoes instead of meat, I have cooked it with hamburger meat and it has always tasted very good. [/quote]
