They cook very quickly. I make a quick dish that I eat with rice.
1 cup of dry lentils
2 onions chopped, 2 tbs of garlic-ginger paste, 2 tomatoes chopped, 1 handful of chopped cilantro
1 lbs boneless chicken thighs cut into 1 inch cubes
Cumin seeds - 1 tsp, turmeric - 1 tsp, red chilli flakes/powder - 1/2 tsp (or some black pepper powder), salt
Slightly dry roast the dry lentils on a pan so that it has an aromatic nutty smell. Cool. Now, wash well in a sieve and then soak in 2 cups of water.
In a pan, saute the chopped onions in two tbsp of cooking oil or butter, when the onions become golden brown, add the ginger-garlic paste, mix. When the raw smell of ginger garlic is gone and a nice aromatic smell start to waft, add tomatoes, mix, let it cook for a few minutes. Add the chicken, and brown it for some time in the mixture. Add the spices and the mix well, keep cooking till the chicken in browned on all sides and juices are sealed in. Add the lentils with the soaked water + 1 more cup of water. Mix, Let the mixture come to a boil and then cover and cook for approx 20 minutes on low. Check to see if the lentils are cooked (It should smush up when you press between finger and thumb), else cook for sometime more. Add the chopped cilantro and cook for a minute more. Serve with rice.
It is a very forgiving recipe. If you do not have the spices, you can can just use salt and pepper and it will still taste good. The magic lies in frying the Onions, Tomatoes, Ginger, Garlic. I have even made it with adobo seasoning, jerk seasoning, taco seasoning, chilli seasoning, ramen noodles flavoring... I have used cooked it without any meat, I have cooked it with potatoes instead of meat, I have cooked it with hamburger meat and it has always tasted very good.
