Broccoli & anchovy/garlic pasta (add broccoli florets to pasta in final 3 minutes of cooking). Sauce is EVOO, or butter, some garlic, anchovies (optional), chili flakes. Mix. Eggs can get boring. Make a fried egg burger/English muffin. Serve with steamed veg. Make bean & cheese enchiladas or quesadillas instead of tacos. Chana masala instead of palak paneer. Stir fries instead of fried rice. English muffin/French bread pizzas (I used tomato paste and whatever cheese I have on hand. Just spread paste on halved muffins, top with cheese, and grill. Add whatever else you have to hand). IKEA meatballs with a can of chopped tomatoes and some seasoning. Serve with spaghetti or other pasta. [/quote]
