Pan pizza
Sheet pan chow mien
Beans & rice
Bao buns with various fillings - spicy tofu, sweet-sour eggplant etc
Serious Eats easy ricotta gnocchi
Seasonal risotto
Various pasta dishes

You don't say what your kids won't eat, but instead of lentil soup you could make a veggie (or meat) chili.
Broccoli & anchovy/garlic pasta (add broccoli florets to pasta in final 3 minutes of cooking). Sauce is EVOO, or butter, some garlic, anchovies (optional), chili flakes. Mix.
Eggs can get boring. Make a fried egg burger/English muffin. Serve with steamed veg.
Make bean & cheese enchiladas or quesadillas instead of tacos.
Chana masala instead of palak paneer.
Stir fries instead of fried rice.
English muffin/French bread pizzas (I used tomato paste and whatever cheese I have on hand. Just spread paste on halved muffins, top with cheese, and grill. Add whatever else you have to hand).
IKEA meatballs with a can of chopped tomatoes and some seasoning. Serve with spaghetti or other pasta.

Minestrone or pasta e fagiole soup. I bought alphabit pastas and my kids love eating them in veg-forward soups.
Quesadillas with shredded zucchini and Black beans (cook down the zucchini w onion and the texture is the same as the melted cheese. I fill and bake these, cut into triangles and freeze. Then I just take out what I need.
Shrimp kabobs. Chicken satay
Thai curry. I make my own sauce (spruce eats recipe) and add a can of coconut milk w whatever veg and protein we have.
Breakfast casserole cut into strips and folded into a breakfast burrito
Cheesesteak stuffed peppers (current household favorite)
Tuna melts or hot browns w a cup of tomato soup

She popped up on my facebook feed and now I am devoted to her. The recipes are easy and tasty. These are the quick ones. I usually sit down on Sat. Pick out 3-4 for the week then shop on Sunday. Make enough for left overs and done for the week.

Thanks for the Thai curry reminder. I actually have all of the ingredients on hand for that too.

There’s a million kinds of vegetable soups. There’s butternut or acorn squash. I had a brown butter roasted cauliflower soup from Whole Foods that was incredible.

If you don’t like,super complicated recipes, go watch some Tasty videos until you see something that appeals to you.


we do eat meat, I can cook but just don’t have time or energy on weeknights and have two little kids who are somewhat picky.

I would add some sort of tomato based pasta sauce (with meat, or arabbiata, or that tomato feta pasta thing)

Burgers with the protein of your choice.

There’s a million kinds of vegetable soups. There’s butternut or acorn squash. I had a brown butter roasted cauliflower soup from Whole Foods that was incredible.
