Spoon cornbread mixture evenly over the top of the bean mixture. Bake, uncovered, in a 400 degree oven about 25 minutes or until golden. If desired, serve with salsa and sour cream. ========================================== Bean and Rice Burritos for days: Ingredients 1 cup uncooked rice 1 onion, chopped 4-5 cloves garlic, chopped or minced 1 green pepper, chopped j1 alapeno pepper, minced 1 can (or approx. 15 oz. dry) black beans, drained and rinsed 1 can (or approx. 15 oz. dry) pinto beans, drained and rinsed 1 small can sliced mushrooms 1 small can sliced olives Tortillas Tomato and sour cream, to taste Directions Cook rice according to package. While rice is cooking, saute onions and garlic for a few minutes. Add jalapeno and green pepper. Saute for a few more minutes. Add beans, mash with spatula. Add mushrooms and olives. Add in rice and let mixture heat and mix uniformly. Shockingly easy and delicious -Portobello burgers -Homemade sushi with avocado - easier than you think -Veg sloppy joes - the natural brand just requires some tomato paste -Baked sweet potatoes with black bean chili -Veg chili dogs with veggie dogs, canned veggie chili We love all kinds of sides: -Salads (simple with mixed greens, lemon-garlic dressing, avocado, tomatoes) -Roasted veggies like cauliflower, broccoli, squash/pumpkin, potatoes -Glazed carrots Hope this helps![/quote]
