Me & my hubby are vegetarians. every day we invent new stuff.
1. fry tofu w/ olive oil
2. saute minced garlic, red bell pepper & white onions & canned mushrooms
3.mix it all
4.add any spicy sauce
5. milk (we're lacto-ovo)

Here is an easy dinner that we call the smorgasborg:

loaf of crusty whole grain bread with any or all of the following:
cheeses (whatever's in the fridge)
hummus
sliced avocado
miso paste or pesto as a spread
raw or previously cooked veggies

Just slice the bread and put the toppings on a platter. We eat this as open faced sandwiches that each person assembles themselves.

In the summer its the whole meal. In the winter we add a hot soup.

My favorite vegetarian cookbook is: Love Soup, by Anna Thomas. The soups are very easy, so healthy, and so delicious.

My favorites are the Original Green Soup, Great Pumpkin Soup, HEarty Brown Lentil, and persian spinach spread. But everything we've made has been great.

I am the OP of the dominating in the kitchen thread. I would love to share my vegetarian quick recipes

Two Bean Tamale Pie
Ingredients:
1 medium green bell pepper, chopped
1 medium onion, chopped
2 cloves garlic, minced
1 tablespoon cooking oil
15-ounce can kidney beans, rinsed, drained, and slightly mashed
15-ounce can pinto beans, rinsed, drained, and slightly mashed
6 ounce can (2/3 cup) vegetable juice (I often just use some V8)
4 oz can of diced green chili peppers, undrained
2 teaspoons chili powder
1 teaspoon ground cumin
8.5 ounce package corn muffin mix
1/2 cup shredded cheddar cheese

Method:
Grease a 2 quart square baking dish or a 10 inch quiche dish, set aside. In a medium skillet cook bell peppers, onion, and garlic in hot oil until tender. stir in kidney beans, pinto beans, vegetable juice, chili peppers, chili powder, and cumin; heat through. Spoon bean mixture into prepared dish.

Prepare corn muffin mix according to package directions; add cheese, stirring just until combined. Spoon cornbread mixture evenly over the top of the bean mixture. Bake, uncovered, in a 400 degree oven about 25 minutes or until golden. If desired, serve with salsa and sour cream.

Bean and Rice Burritos for days:
Ingredients
1 cup uncooked rice
1 onion, chopped
4-5 cloves garlic, chopped or minced
1 green pepper, chopped
j1 alapeno pepper, minced
1 can (or approx. 15 oz. dry) black beans, drained and rinsed
1 can (or approx. 15 oz. dry) pinto beans, drained and rinsed
1 small can sliced mushrooms
1 small can sliced olives
Tortillas
Tomato and sour cream, to taste

Directions
Cook rice according to package. While rice is cooking, saute onions and garlic for a few minutes. Add jalapeno and green pepper. Saute for a few more minutes. Add beans, mash with spatula. Add mushrooms and olives. Add in rice and let mixture heat and mix uniformly.

Heat tortillas, garnish with tomato and sour cream

Makes 12ish burritos

Preparation time: 45 min.

Other quicker dinner ideas:
-Homemade pizza with canned dough, pizza sauce, cheese and veggies as toppings
-Tacos - use boca crumbles as meat
-Fajitas - saute some onions, bell peppers and portobellos or chikn strips
-Cheese rice-a-roni with chicken strips. Shockingly easy and delicious
-Portobello burgers
-Homemade sushi with avocado - easier than you think
-Veg sloppy joes - the natural brand just requires some tomato paste
-Baked sweet potatoes with black bean chili
-Veg chili dogs with veggie dogs, canned veggie chili

We love all kinds of sides:
-Salads (simple with mixed greens, lemon-garlic dressing, avocado, tomatoes)
-Roasted veggies like cauliflower, broccoli, squash/pumpkin, potatoes
-Glazed carrots

Frittatas are easy an no crust as with a quiche. I also like simmering beans with cumin and chili powder and making tacos. Add in lettuce, cheese, salsa, etc.

Whole foods website and epicurious have tons of veggie meals. My usual staples are bean burritos, lentil soup, quiche, homemade pizza, mushroom barley soup, tofu and veggie stir-fry.

If you use premade crusts, quiches are pretty easy - I love using spinach, mushroom, and cheese, and serving with a nice salad.

I am looking for some relatively easy and preferably relatively quick vegetarian dinner ideas. There are days I work at home and have a bit more time, but often that's not the case. Any recipes, links, or cookbooks you can recommend? I have lots of veg cookbooks for those days when I have hours to cook, which don't occur too often. And Vegetarian Times hasn't appealed much lately. Thanks to the poster who "dominated in the kitchen" for her links!
