[quote=Anonymous]Breakfast burrito poster here. I'm still tinkering with the recipe, but this is what I used as a starting point: http://www.seriouseats.com/recipes/2011/04/breakfast-burrito-with-chorizo-potato-egg-recipe.html I really like the way they cook the potatoes here (I added some chopped onion while browning them in the skillet though), and I've used regular breakfast sausage instead of chorizo. Trying to remember how many eggs I cooked last time--think I started with 8 or 9 then added 4 more, and 2 medium baking potatoes and a pound of sausage. It was a little too much sausage for me. Made about a dozen, but DDs and I ate some of the stuff while we were making them, so it was a pretty inexact process. When I made a big batch for freezing, instead of adding each ingredient to the tortillas separately, I threw everything into a big mixing bowl (potatoes, eggs, sausage, grated cheddar, and a half jar of mild salsa), stirred it up, and scooped it onto the tortillas. Skipped the cilantro and scallions since I wasn't sure how they would freeze. Rolled them up then wrapped each in foil and put them all into a freezer bag. About three minutes in the microwave wrapped in a damp paper towel was just right to reheat them when frozen, but I have a wimpy microwave, so start with 2 minutes, flipping it over after a minute.
