Breakfast burrito poster here. I'm still tinkering with the recipe, but this is what I used as a starting point:

I really like the way they cook the potatoes here (I added some chopped onion while browning them in the skillet though), and I've used regular breakfast sausage instead of chorizo. Trying to remember how many eggs I cooked last time--think I started with 8 or 9 then added 4 more, and 2 medium baking potatoes and a pound of sausage. It was a little too much sausage for me. Made about a dozen, but DDs and I ate some of the stuff while we were making them, so it was a pretty inexact process.

When I made a big batch for freezing, instead of adding each ingredient to the tortillas separately, I threw everything into a big mixing bowl (potatoes, eggs, sausage, grated cheddar, and a half jar of mild salsa), stirred it up, and scooped it onto the tortillas. Skipped the cilantro and scallions since I wasn't sure how they would freeze. Rolled them up then wrapped each in foil and put them all into a freezer bag. About three minutes in the microwave wrapped in a damp paper towel was just right to reheat them when frozen, but I have a wimpy microwave, so start with 2 minutes, flipping it over after a minute.

chili for sure. I make stuffed cabbage and freeze it in dinner size portions. it's a lot of work but yum. lasagna for sure.

Chili is great, or beef stew, or chicken pot pie. These are my go-to freezer recipes, along with stuffed shells (mix about 3 cups of raw spinach, chopped, with a big container of ricotta cheese and 1/2 cup of parm. Stuff cooked jumbo shells. Put a jar of sauce in bottom of 9X13 pan, put stuffed shells on top, and sprinkle a bit of mozz. on top. Bake at 375 for about 20 minutes, and broil for a minute or two to brown.

I'm not a casserole person, but found this pre-kids in Fitness or Women's Health or some other magazine and we love it.

I just made a pasta dish that freezes well - and i divided into two pans for two meals (since it's just DH, me, and 2 year old DS).

small container part-skim ricotta
4 cups shredded mozzarella
1.5 jars favorite spaghetti sauce
1 lb medium shell pasta
2 eggs
dried oregano, crushed red pepper, dried basil, salt + pepper
grated parmesan (about 1/2 cup)
1 lb lean ground beef or ground turkey, browned

In casserole dish(es) place ricotta, spices, parmesan, raw egg, mix together.

Cook pasta until al dente, drain, and while still steaming hot, add to ricotta mixture. Mix until combined, then spread in even layer in casserole dish.

Add layer of (browned) ground meat, followed by mozz cheese, followed by sauce.

Bake for an hour (if defrosted) at 350, probably hour and a half if frozen.

Soups or casseroles of any kind. I have a great recipe for a quinoa-based casserole with ground turkey, acorn squash, sliced mushrooms, shredded cheese and chicken broth. Amazingly yummy and healthy. My 1yr old and my DH, both with very different tastes, both ask for seconds.

Pastas will also freeze well.

I have to travel for 2 weeks starting next week, and I do all the cooking in our house. I was thinking I could prep some stuff this weekend and stick in the freezer with notes to "heat at 350 for 40 minutes" type thing. But I've never done this before. Usually I just leave them on their own, but I'm feeling generous. Any suggestions, or good websites with ideas?
