For a STEM major in college it's important to do well (well-enough) in: AP Physics C, AP Chem, AP Calc BC, AP Bio. Exposure to 3-4 or those. Whatever else, whatever prerequisite classes gets the student to that level, is ideally, what should be on their schedule.
So do kids routinely double up on AP science classes in 11th-12th? At our school you have to do honors chem/honor bio before taking the AP class. So after honor bio (9th), honors chem (10th), AP physics (11th), you'd have to choose either AP Bio or AP Chem or many prefer AP Environmental Science. If it's "important" to do AP Chem AND AP Bio then you are taking those together plus AP Calculus plus other AP classes that have been deemed important in the humanities. No wonder kids are so stressed out.
