To get a woman who doesn’t wear much jewelry? She’s beautiful, dresses well, but doesn’t wear a ton of jewelry on a daily basis. What is an appropriate style and carat? I am proposing to my girlfriend of a year soon.

This is really not a question we can answer for you. If you want to surprise her and pick it out yourself, but pick something she'll like, you need to ask one of her best friends, not internet strangers.

-Don't spend $10k. A woman that doesn't pride jewelry probably wouldn't see a high price tag as reasonable or practical. Shoot for $3-4k.
-A simple solitaire will also allow you to let her pick out a wrap as her wedding ring.

This is probably the best guidance you are going to get. What are her hobbies? Anything sporty and/or dirty - take that into consideration and maybe consider platinum (for strength) so she doesn't have to worry about it and can still wear it all the time.

You don't need a ring to propose. Ask her to marry you! If she says yes, go ring shopping together.
