I usually only use a half can of artichoke hearts at a time. How can I save the rest? Are they OK if I freeze them? How long do they last in the fridge after opening? Thanks! |
Freeze them. TJs sells frozen ones. |
You can save them for a few days in the fridge, in the canning liquid. Otherwise just freeze them. |
Here's the answer: put them in a ziplock bag with some of the liquid from the can and put the bag in the fridge. |
Last week my DH made an amazing red sauce - a couple of cans of diced tomatoes, some marinated artichoke hearts, mushrooms, the usual red sauce seasonings (onion, garlic, oregano). It really exceeded our expectations. |

Make a dip with them, put them in pasta, in salad or in an omelette.
