leftover canned artichoke hearts -- how to save them

I usually only use a half can of artichoke hearts at a time. How can I save the rest? Are they OK if I freeze them? How long do they last in the fridge after opening? Thanks!

Freeze them. TJs sells frozen ones.

You can save them for a few days in the fridge, in the canning liquid. Otherwise just freeze them.

Here's the answer: put them in a ziplock bag with some of the liquid from the can and put the bag in the fridge.

Last week my DH made an amazing red sauce - a couple of cans of diced tomatoes, some marinated artichoke hearts, mushrooms, the usual red sauce seasonings (onion, garlic, oregano). It really exceeded our expectations.

why not just eat them?

Make a dip with them, put them in pasta, in salad or in an omelette.

OK, I bought a huge jar of marinated artichokes. Can I freeze some of them??

That is illegal, you have to eat them within 24 hours or it is a felony.
