Easy dinners for a family visit

Anonymous
I have family coming into town for two weeks and am worried that dinners will turn into delivery pizza every night. Does anyone have good and easy dinner suggestions that are somewhat crowd pleasing? Something along the lines of hot ham and swiss croissants? TIA!

Big bowl of pasta. Burgers on the grill.

Salad with either.

Pork chops (I just pan fry).

Frozen veggies in microwave with butter + thyme takes no work at all.

Stir fry. Chop in advance or buy pre-chopped if you will be busy all day.

Family should help you clean up to take the stress off.

Chicken Parmesan. You can fry up the cutlets ahead of time and freeze, then just bake with sauce and mozzarella the night you need them and serve with angel hair and a salad.

I also love "BBQ" meatballs. You can make the meatballs ahead, freeze, and bake with the sauce that night. Google the Pioneer Woman's recipe. I do these for friends who've had babies with mashed potatoes and macaroni and cheese and they are always appreciated.

One night just do a sandwich spread- get some rolls and breads, sliced cheeses, condiments, lettuce and tomato, chips and a couple kinds of salads- potato, macaroni, pasta.

And finally, tacos! Make a big pan of meat and let everyone assemble their own. Serve with refried beans.

All good suggestions so far. Homemade pizza is another easy one for feeding a crowd - just buy some premade dough from TJs and toppings. If they're close family, maybe you could ask them to cover one night or two?

Luckily, they're coming during corn on the cob season. Hot dogs and corn on the cob should cover you for about every 3rd or 4th night. (You can alternate between potato salad, cole slaw, and tossed salad for the third dish on that menu.)

Only if I can come over! This is like one of my all time favorite meals

But what about a taco bar (make meat in a crock pot, skinnytaste has good filling recipes)? Some mentioned it and its a great idea. Grilled chicken breasts marinaded all day in Italian dressing, add some summer squash to the grill (or make kabobs).

Crockpot chicken with a sauce of your choice. Shred it for sandwiches with potato salad and another vegetable.

Taco bar. Easy!

Oh, skinnytaste also has a lot of crock pot recipes that might be worth looking at.
