That sounds great. Have a wonderful, light sauce for the fish that also goes with the couscous. And consider a ribbon salad.

Sounds great so far. I would add sliced bell pepper underneath the fish and some green onion on top for some color and something to the couscous as well.

Meringues with fresh berries and whipped cream for dessert? Light (ish) and she can have berries only if she is really strict with her diet.
I agree that some color would be nice. I use silken tofu, garlic, lots of dill, lemon juice and zest, a bit of olive oil or light mayo or 2% fage yogurt, and a touch of vinegar all in the food processor for a really green pretty fish sauce. Scallops with a nut crust would be fun too. Or tuna steaks seared with sesame seed crust. |
| For dessert make an angel food cake (fat free) for dessert and serve with fresh strawberries and a strawberry sauce (for the sauce, mash up strawberries, bring to a boil, add a little sugar if necessary). |

You could do summer rolls--put out simply cooked fish or chicken along with herbs and julienned vegetables and she can assemble her own at the table. If she has food issues, she can basically make lettuce and rice paper sandwiches while pretending to eat a normal meal.
Another dessert option is pavlova--low in calories and great with fruit. |

I love the idea of the halibut. Would you consider serving with some zucchini ribbons? I always think those can be done delicately and taste wonderful with the halibut.
How about served with a red bell pepper harissa? Is she open to spicy? That would tie the halibut in nicely with the couscous. Serve it with a nice Riesling. | I ended up making halibut in parchment with the most amazing Chermoula sauce. A yummy salad. And Israeli cous cous with roasted sweet potato and sautéed kale mixed in. It was divine! |
