What's your signature dish? The one that your kid one day will come home from college and say "Mom (or Dad), please make xxx for dinner"....

Mine is Italian Turkey Meatloaf. I don't have the recipe anymore, but roughly:

Package of ground turkey
Roll of hot sausage (chicken, pork and turkey all seem to work)
1/2 cup italian breadcrumbs
1/4 cup milk
2 beaten eggs
one yellow onion finely diced
TB worchestshire sauce
TB italian seasoning
dash of salt

Mix all together and form into loaf

For "topping", mix together 1/2 jar of spaghetti sauce, TB worchestshire sauce, dash of hot sauce and spread over meatloaf

Cook in 350 degree oven for 30-40 minutes.

Swiss Cheese Chicken. You're all probably going to think this is gross and unhealthy, but it's delicious, and everyone I've made it for or shared the recipe with loves it.

3-4 chicken breasts, seasoned with salt and pepper and onion powder
Put these in a baking dish
On top, lay 3-4 slices of swiss cheese
Mix one can of cream of chicken soup and 1/2-2/3 of a cup of white wine. (Enough to thin out the soup to make it pourable- you can make it as thin as you like.) Pour this over this chicken.
Sprinkle Stove Top herb stuffing over the entire top of the casserole. Then melt 1/2 stick of butter and pour over the stuffing to keep it moist while it bakes. Bake about 45 minutes at 375. I serve it over rice.

My stepson always asks me to make my spaghetti when he's here, but it's nothing really special. His mom literally just mixes tomato sauce and meat though, so I think the fact that mine actually has seasonings makes him think it's amazing.

My family loves my roasted veggies I make, and they are idiot-proof (I'm a kitchen idiot).

Large pieces of onions, red peppers, mushrooms and brussel sprouts tossed in olive oil, lemon juice, sea salt and thyme roasted on 450 for 30-40 minutes. Stir once.

Chicken Pot Pie. My kids go crazy for it. It's simple, nothing spectacular IMO, but they love it.

I make a pumpkin pie that everyone freaks out over. It's a regular ole recipe, but I add sour cream and fresh ginger to it, and spread apricot preserves over the butter crust for a tart bite and to keep the crust flaky.

I know, right?

I've never heard of or even seen a lasagne recipe that called for cottage cheese.

I do put spinach and sausage in my lasagne, that is a must.

I believe Cooks Illustrated uses cottage cheese in its lasagna recipe. Haven't tried it myself.

This soup is fantastic. Everyone loves it.

Asparagus Soup

INGREDIENTS
* 1 pound fresh asparagus
* 3/4 cup chopped onion
* 1/2 cup vegetable broth
* 1 tablespoon butter
* 2 tablespoons all-purpose flour
* 1 teaspoon salt
* 1 pinch ground black pepper
* 1 1/4 cups vegetable broth
* 1 cup soy milk
* 1/2 cup yogurt
* 1 teaspoon lemon juice
* 1/4 cup grated Parmesan cheese


DIRECTIONS

1. Place asparagus and onion in a saucepan with 1/2 cup vegetable broth. Bring the broth to a boil, reduce heat and let simmer until the vegetables are tender.
2. Reserve a few asparagus tips for garnish. Place remaining vegetable mixture in an electric blender and puree until smooth.
3. Melt butter in the pan that was used for simmering the asparagus and onions. Stir while sprinkling flour, salt, and pepper into the butter. Do not let the flour brown. Allow the mixture to cook only 2 minutes. Stir in remaining 1 1/4 cups vegetable broth and increase the heat. Continue stirring until the mixture comes to a boil.
4. Stir the vegetable puree and milk into the saucepan. Whisk yogurt into the mixture, followed by lemon juice. Stir until heated through, then ladle into bowls. Garnish with reserved asparagus tips. Sprinkle with Parmesan cheese if desired.
