What can I make and freeze that uses up a lot of eggs?

Just realized I have a dozen eggs I totally forgot, expiring this Friday (in addition to another half-dozen we’re working through). We’re going out of town on Saturday so I will need to freeze whatever I make. Something simple to suggest??

Yep, quiche. But on a side not, the egg expiration date is nothing to be stark about. I’ve let them go at least a month beyond and they are just fine.

Very true. If am egg is bad you will know immediately. So just keep them for a while. And I have only seen this once in many years with one egg.

No need to rush to use up the eggs

They won't expire on that date, they are fine to keep longer. But if everybody has an egg for breakfast and maybe a hardboiled one on salads at dinner, that should use them up without any special projects. My family is only 3 people and we go through a dozen in no time.

Those eggs will be fine in your fridge for WEEKS. Just FYI.

Crack them and freeze them in ice cube trays. Pop into a ziplock bag once set.

You can make sous-vide style egg bites. There are a lot of recipes online, and I make a batch and freeze so I can microwave one in the morning for a fast breakfast.
