It doesn’t overheat with the A/C turned off because it can still move enough coolant (even at diminished capacity) through the radiator to keep engine temps below the overheat threshold.
But when you add in the extra thermal load of the A/C evaporator coil when the A/C is running, the radiator can no longer shed enough heat to keep engine temps down.
Your water pump is failing. I’m guessing you have the 1.8L turbo? Any severe overheating will warp your cylinder heads within minutes. That’s a totaled engine.
