We use Moosewood's "Muffin Madness" recipe. Our favorite is the banana muffins--we double the chocolate chips, but you could also use none to make them more healthy. The same recipe can be used for full-sized or mini-muffins, just adjust the baking time. (We bake full-sized muffins 25 minutes, mini for 15.)

I make a quick muffin that tastes like cake⦠half a banana, egg, 3-4 heaping tbsps flour and 1/4 tsp baking soda. Add vanilla, cinnamon, bit of sugar and salt. Bake at 375 for 20 min. That makes two regular sized muffins so if you double it should be enough for a week of minis. |
