Muffin recipe for young toddler?

Can you please share one if you have a low sugar version?

Preheat the oven to 350 degrees

2 or 3 very ripe bananas
-They must be very mushy, or they won't add the right sweetness/moisture content
-I will sometimes put mushy bananas in the freezer until I'm ready to make muffins, then I put them in my mixing bowl to thaw

Put the bananas in a mixing bowl and mash then with a fork or potato masher, then add:

3 Tsb. melted butter
-I usually put the butter in a glass jar and place it in a put of boiling water.
-You can probably microwave the butter, but I think it changes the molecular structure slightly.
1 egg
1/2 tsp of very good vanilla (I like Charles H. Baldwin & Sons from the Berkshires)
1/4 cup white sugar
-You can adjust this depending on how many bananas you have or how sweet they are
-Don't reduce the sugar too much or they will be dry
1/2 tsp. coarse kosher salt

Mix everything together. Then add:

3/4 cup flour
1/2 tsp baking powder
1/2 tsp baking soda

Mix everything together and place the batter in a gallon size ziploc bag. Snip off one bottom corner and use it as a piping bag to pipe the batter into a 24 count mini muffin tin that has been sprayed with Bakers Joy baking spray (you can also use mini muffin liners.)

Place in a 350 degree oven and bake for 11 -13 minutes. Cool in the muffin tin for 5-10 minutes before removing.

These freeze really well. Just microwave them for about 30 seconds.

PP again. My daughter loves to help me make these (she's 3 now, but we've been using this recipe for a couple of years).

We also add three blueberries per muffin if we have some on hand.

I make these regularly. If I don’t have blueberries I switch out for a few mashed bananas. I halve the sugar. Substituting applesauce for the oil is also a possibility.
