| The last few weeks we've been eating really heavy foods. Homemade mac n cheese, tacos, cajun pasta with cream sauce, short ribs, chinese chicken.... Just really heavy foods. Are there any recipes you love for lighter meals? I have a picky toddler and a teen that will not eat veggies. I don't cook for the kids though, they have to eat around what I make. Any suggestions? Please help. |
| In the Spring/Summer, I love grilled fish with grilled veggies and whole grain rice/cous cous. I also enjoy grilled chicken on a salad with black beans, corn,avocado and tomatoes. |

Bake chicken breasts
Add to lots of lettuce, carrots and sliced almonds dressing: 1/2 jar of asian plum sauce rice vinegar tsp of sesame oil garlic hot pepper flakes |

bake a london broil with some chili powder on it and slice thin
get some small tortillas salsa, avocado, corn, lettuce, FF sour cream |
We do the same but with cut up chicken breasts that we saute in taco seasoning. And you can put the lettuce/tomato/salsa etc in little bowls so everyone can make their own as they like it. |
