Making tacos more interesting

I am having some families over for dinner. I thought I would make tacos and have folks assemble them. Any ideas to make it more appealing (fixings, side dishes).

You might consider buying chips & fresh salsa (and even guac) from your favorite local mexican restuarant. Tastes so much better!

If you offer crunchy shells you could fry them yourself instead of buying the prepackaged hard shells. They are OMG delicious when you fry them at home.

I think Chipotle has the best quac around. And their chips are awesome, too.

Make your own guac for a crowd:

3 avocados, juice of 2 lemons (or limes), sea salt, crushed garlic, dash of cayenne, thinly sliced scallions or shallots (you can omit these--DC doesn't like them). You can mash these with a fork or chop in a food processor.

Sour cream, shredded cheese, shredded lettuce or cabbage, salsa.

For a nice twist, you can also use fish sticks as a protein in addition to beans or meat.

we love fish tacos. just grill up some fish and serve with soft corn tortillas. We serve with grated red cabbage with a little vinegar on it, sour cream with a little cumin added, and store bought fresh salsa.

Along with the usual-sour creme, tomotoes or salsa, cheese, etc. why not also set out little plates of M&Ms, anchovies, wasabi peas, pickled beets, rumaki, AAA batteries, kasha, Jujyfruits and other unusual toppings. I went to a taco party recently where the host did this and folks just haven't stopped talking about it.

OP, when I make tacos I puree green peppers, shredded carrots, zucchini, garlic, onion, and a red pepper. As I puree it I pour in a little olive oil. Once the meat is browned I add the puree and I packet of Trader Joes taco seasoning. I add salt/pepper and some chipotle powder too. I cover and cook for an hour in the dutch oven on the stove. The sauce turns out soooo delicious and my kids have no idea they are eating all those veggies.

Yep - I was thinking of making it with tomatillos since tomatoes aren't in season.

You can serve tostadas alongside tacos. They are corn tortillas fried flat (also available in stores already fried) and you spread refried beans, cheese, and other taco toppings. They are a vegetarian alternative to tacos.

I like the fish tacos idea!
