Simple Tilapia Recipe Suggestions???

I purchased four pieces of tilapia this weekend. I cooked two pieces already using a very basic recipe - salt, pepper, a little carribbean fish seasoning and olive oil. I want to cook the remaining two pieces but don't want to go and buy a bunch of stuff at the store. Does anyone have any suggestions for something simple?

Olive oil, salt, pepper, chili pepper, fresh garlic. Sautee fish. Chop tomatoes (canned, fresh cherry ones are better), dice olives, serve on top. Put fish and tapenade (that's the olices/tomato stuff you just made) on white rice or couscous.

Should have mentioned that you should sautee' the olive/tomatos and garlic briefly in olive oil before putting on the fish.

If you're not watching calories one of the highest recipes at allrecipes.com is a tilapia recipe where you cover the fish with a mixture of parmesan and mayo and bake. Sounds gross but it's actually pretty good!

Coat with an egg wash (egg and milk). Ground up some cornflakes, put extra salt and pepper on, and press the fish into that. Pan fry that. Fast and delish.

I just made tilapia last night. Dipped in egg, then dipped in plain breadcrumbs seasoned with season-all (basically garlic salt) and old bay seasoning. Then pan fried in vegetable oil.

We like to bake it in foil with a soy/ginger sauce, cilantro and either beans or zucchini.

i like to make it with soy sauce, honey and bananas. or oranges or mangos.

when i want to be quick, i usually just pick a spice blend, any spice blend... mrs. dash/cajun seasoning/lemon pepper/chili powder/etc... and sprinkle it liberally all over, then pan fry.

You can do the same with Emeril's seasoning.

salt, pepper, olive oil, and 2 T of white wine and put the whole thing in an aluminum foil packet and bake!

I lay them on a piece of foil in a pan with sides and then cover them with a can of diced tomatoes, olive oil, lime juice, garlic, salt and pepper. Make a pouch with the foil and seal it up. Bake in the oven for about 30 minutes at 350. Fish will be white clear through. Take it out and use a spoon to remove the tomato mixture from on top. Mix the tomato mixture with one cut up avocado. Serve the fish, tomato/avocado salsa with a side of rice.
