What does taco night look like at your house?

We have been doing “taco Tuesday” for the last few months, and I am getting a little bored with it. Looking for some inspiration!

We mix it up a little. Some weeks we do ground beef/taco shells, but we also like to do carnitas or Cuban-style pork in the slow-cooker and have black beans, rice, salsa verde, cilantro, and maybe red cabbage on tortillas. I'm thinking about doing fish tacos with a cabbage slaw, too.

Sometimes we change up the salsa. I make them from scratch. Instead of tomatoes, I will use mango or pineapple. All with onions, cilantro, lime juice. Or I’ll make a green salsa out of tomatillos. I use different proteins like beef, fish, lentils, chicken. Choice of hard or soft shells. Always have avocado and some kind of greens like kale. Cheese can be feta, cheddar, gruyere, or whatever I have. Cholula sauce or another hot sauce.

I would be bored too if I did it every week! I would take a “Taco Tuesday” pause. We do it once every 6 weeks and everyone loves it. Well...the kids love it.

We don't do it every week but we like to make shrimp tacos and fish tacos, with cabbage slaw and pico. I also make sweet potato and black bean tacos or zucchini tacos, but the kids don't eat those.

Taco night is my night not to have to put any thinking or creativity into dinner so it will always be beans, ground beef, lettuce, tomato, and cheddar.

Of course doing nothing once a week is boring.

Make quesadillas. They're easier. Side of retried beans, sliced avocados, and sautéed peppers/onions.

I usually do:
Grilled spice rubbed Mahi mahi or shrimp with black beans, tomatoes, guac, tomatoes and mango (would make mango salsa but they prefer just chopped mango)

Or
Scrambled eggs, cheddar, black beans, Trader Joe’s soyrizo

Just tried making tacos with beyond beef. Do not recommend and I'm a meat eater who loves fake meats.

Ours is pretty standard but we do mix up the protein--ground pork, ground beef, ground turkey, shrimp, pulled pork, pulled/chopped chicken.

How about nacho night? We did nachos for dinner for the superbowl and it was a nice change, even though all the ingredients were essentially the same.
