What does taco night look like at your house?

we always have: sour cream, guac, salsa, shredded cheese, chopped cilantro
a rotation of: ground beef, pulled pork, shredded chicken
usually one of: re-fried beans, black beans, bean and corn salad, fajita veggies, rice
sometimes we do loaded nachos or tortilla soup instead of tacos
If I did not have 3 elem kids we might not do this every week, but right now everyone likes what they make and it's pretty easy to get on the table. With leftovers I usually freeze burritos or quesadillas for lunches

I'm more inclined to to fajitas - sauteed papers and onions and mushrooms, beans, cheese, salsa, guac...

I like Budget Bytes' chicken fajitas. She also has a variation with portobello mushrooms and I have successfully substituted shrimp. https://www.budgetbytes.com/oven-fajitas/

I also like doing quesadillas with sauteed corn, black beans, and peppers (meat optional) mixed with a bit of taco seasoning.

Mix up the toppings!
-ahi tuna tacos with seaweed salad + pickled ginger
-homemade yam fries + black beans
-garlic chilli shrimp + asian slaw
-pineapple salsa + coconut shrimp
-"deconstructed" taco bowls

I typically have a large number of toppings to choose from, along woth soft and hard tacos.

Guac or cut avacados
Black beans (which has garlic and onions in it along with some spices)
Onions and peppers
Rice
Roasted red peppers
Tomatoes
Salsa
Cheese
Lettuce
Meat (turkey, beef, pork, chicken, sliced - ground- chopped) whatever I have handy
Typically 1-2 different sauce toppings

We do soft and hard tacos: spread a soft taco with guacamole or sour scream, wrap around a hard taco shell, and fill as desired. Often we have tortilla chips with melted cheese as another option.

DP but I like this better as a quesadilla. Mash the sweet potato or butternut squash and spread on tortilla. Mash blackbeans as spread over. Shred cheese, top with tortilla and fry it all in olive oil. I don’t like the big chunks of sweet potato. Also good with corn added.

If you do ground meat tacos, do half whatever meat, half chorizo. Not healthy at all, but so, so good.

OP, you could do a fajita night. Or fish tacos which are super easy- get some frozen fish filets and whip up some fish taco sauce, lots of recipes on the internets

I alternate tacos with fajitas, tortilla pie (Martha Stewart’s black bean tortilla pie recipe, but I add red peppers), tostadas with black beans, sautéed peppers and onions, and cheese (NYT recipe), and quesadillas.
