Turkey fajitas - sliced turkey cutlets w/ peppers and onions, some green onions and salsa on top of corn tortillas.

I'm doing marinated baked chicken breasts, mashed potatoes and veg (probably carrots or spniach).

baked ziti (ziti, ricotta cheese, shredded mozzarella, jar of spaghetti sauce, 4 links of crumbled turkey italian sausage - 2 mild, 2 hot - from whole foods meat counter). it's so easy, i make it all of the time.

baked salmon, brown rice, steam green veggies

Stir fry with shrimp (if I get to the store) or garbanzo beans (if I don't) over rice.

Can you share a recipe for the corn cakes? They sound delicious.

I'm thinking of grilled cheese and homemade tomato soup. I need a comfort-food boost.

I have a flank steak in the crockpot with some onion, carrot, garlic, beef broth, and a bit of tomato paste. I shred the beef with a fork and serve it with the sauce and egg noodles or mashed potatoes - my kids love it & it's great on a cold/rainy night.

I'm thawing out a container of beef stew (made a big batch to freeze awhile back) and will pair it with french bread - Harris Teeter carries frozen breads from LaBrea Bakery that go from the freezer to being done in about 15 minutes. I was skeptical at first but they are quite good.

Actually, I changed my mind. We ended up having buffalo burgers w/ broccoli slaw that I made using pre-shredded slaw mix from WF and adding some wasabi mayo, white vinegar, scallions and red peppers. Very tasty. Now we'll do veggie tonight - maybe stir fried tofu w/ cabbage.
