anyone have a nice recipe for cod? fishcakes, whole or whatever. i see it is on sale at HT this week and i need to add more fish into my diet! thanks for any tips.

We just made it the other night. I chopped up 3 roma tomatoes, a small onion, and added about a quarter cup of parmesan cheese, 1 tb of oil and some garlic powder/salt/pepper. I then liberally salted/peppered the cod filet (about 3/4 of a pound) on both sides, covered with the tomato mix, and baked in a glass baking dish for about 20 minutes at 450 degrees. I also threw on some asparagus spears right on top of the fish and they came out good too. Not exactly gourmet, but quick and easy for a weeknight meal.

PP here... that should be 1 tbs (tablespoon) of olive oil, not tb.

miso cod: make a marinade with a large dollop of miso and rice wine vingear. Bake at 350 until done (15-20 minutes, depending on how thick the fillets are).

DH got a deep fryer for Christmas so we just bought the batter mix that they sell at the seafood counter and deep fried some cod a few weeks ago. Delicious! All our friends said that they're coming over every Friday during Lent.

I cut up several zucchini and some good mushrooms (crimini or shitake). Lay them on the bottom of the baking tray and put salt and pepper on them. Then lay on your cod fillets. Put soy sauce, sesame oil, minced ginger and minced garlic all over the top. More salt and pepper if you like. Then cover tightly with foil. Cooking time depends on thickness of fillets, but lately I've been doing it about 17 minutes with the ones I've gotten. Serve with rice.
