safe non-stick pans

I heard that annonized aluminum is a good alternative to Teflon (coating not absorbed). At the same time, I thought aluminum was a bad idea (alzheimers). Any advice?

We ditched our Teflon pans for a set of copper-bottom stainless steal pots, and I really don't have a trouble with food sticking.

What about a cast-iron skillet?
Properly seasoned and washed, these are perfectly non-stick.
