Caribean or Mexico with a 8 month old

DH and I would like to take a short (3-4 days) vacation WITH our 8 month old. Can someone recommend a hotel? We are pretty open to destinations. We would prefer all-inclusive since it seems easier. But are willing to go the other route as well. Also, our budget is not too high so no Ritzes for us.
