At this point, whichever bike is available in the store (not much) because otherwise you will be waiting until 2021 to get the one you want.

Mountain bike races exist. Do you mean road bikes?

We all got Trek Marlin 5 bikes at the beginning of quarantine--me, DH, DD (DS got a kid's Trek). They're great bikes for all around riding. You can ride on paved, gravel (like at the canal) and you can do some offroading on these. Very good basic mountain bike for a reasonable price. Super pleased with them! Not sure if they're still available.
