| It pains me to pay $1.99, or whatever it is, at Au Bon Pain for two hard boiled eggs. I was thinking of boiling some on the weekend and taking them to work during the week. Does anybody know how long you can keep them in the refrigerator once the shell is off? I found out the hard way that, if you leave the shell on too long in the refrigerator, it is never coming off. |
| Don't know the answer to your question, but there are tricks for storing eggs in the refrigerator with shell on so that the shell isn't difficult to remove. The fresher the eggs, the harder to remove the shells. Also, if you run them under cold water as soon as you finish cooking them, it makes the shell easier to remove. |

| I have never had a problem getting the shell off a week later. 1-2 weeks sound right but I'm not comfortable keeping them for 2 weeks. Interesting that the link says the eggs should be refridgerated within 2 hours. I remember as a kid my mother would hide the easter eggs at night, we would find them in the morning, then they would sit in a basket on the counter for the whole day and we would eat them. They did eventually end up back in the fridge after about 24 hours. |

If I make them on a Saturday, they still taste good the following Sunday (so 8 days). I haven't gone longer than that.
